Ingredients
- Olive oil
- 1 large eggplant, unpeeled
- 200 gm Happy Valley Mozzarella cheese
- 1 tablespoon Happy Valley Parmesan Shaker
- 120 ml marinara sauce
- 2 tbsp garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- Parsley for garnish
Directions
- 1. Preheat oven to 250°C. Line a baking sheet on a baking pan and brush with olive oil.
- 2. Slice the eggplant into 1 cm thick slices. Arrange them on the baking sheet and brush with olive oil. Season the eggplant with salt, black pepper, and garlic powder. Roast for 15 minutes.
- 3. Remove baking pan from the oven, turn the eggplant slices to the other side, brush with olive oil, and roast until tender for another 10 minutes.
- 4. Add the Happy Valley Grated Parmesan Shaker and Swiss cheese to the pot. Sprinkle in some dried parsley for added flavor. Stir the ingredients until they are evenly combined.
- 5. Move the eggplant to a greased casserole dish, spread half marinara sauce on the eggplant, sprinkle with mozzarella cheese, arrange the remaining eggplant, marinara sauce, and mozzarella cheese with the Parmesan.
- 6. Bake for 15 minutes until the cheese is golden.
- 7. Serve with Happy Valley Parmesan Shaker and parsley.
