Spinach & Cheese Strata

Cheese strata is a comforting breakfast casserole that is easy to make in advance, or at a moment’s notice. Make it cheesier with our Happy Valley’s Parmesan and Mozzarella Cheese. Put it together the night before for a make-ahead breakfast or make and bake it over morning coffee.

Ingredients
- 150 gm Happy Valley Mozzarella Cheese, grated
- 75 gm Happy Valley Grated Parmesan Cheese
- 300 gm baby spinach
- 3 tbsp unsalted butter
- 1 brown onion, diced
- 4 garlic clovers, minced
- 10 sliced of bread, cut into 2.5 cm cubes
- 7 eggs
- 250 ml milk & 250 ml cream, mix
- 2 tbsp Dijon mustard
- 2 tsp salt
- 3/4 tsp black pepper
- 1/2 tsp ground nutmeg
Directions
- Melt the butter in pan over medium heat. Add diced onion, cook until translucent, then add garlic and spinach, cook for another 2 minutes, set aside.
- Butter a 20x20 cm baking dish. Spread one third of the bread in the dish, spread one third of the spinach, one third of parmesan cheese, and one third of the mozzarella cheese. Repeat twice.
- Put eggs in a large bowl, add milk and cream mixture, Dijon mustard, salt, black pepper, and ground nutmeg.. Whisk until combined. Pour the mixture over the strata. Cover the strata with plastic wrap and chill for at least 1 hour.
- Preheat oven to 165 °C. Remove the plastic wrap, bake the strata until golden brown for 70-75 minutes. It might only need 60 minutes of baking time if it sits at a room temperature before baking.
