Ingredients
- 4 tortillas
- 4 slices bacon
- 4 eggs
- 50 g shredded Happy Valley mozzarella cheese
- 2 spring onions (fine chopped)
- 1 red chili (fine chopped)
- 1/2 avocado, small diced
- 3 tablespoons chopped coriander leaves
- 1 tablespoon oil
- Salt and pepper, to taste
Directions
- Dice the bacon into small pieces. and fry them in a pan until they're crispy.
- Combine eggs, spring onion, chili, salt, and pepper in a bowl.
- Warm oil in a pan over medium heat, then pour in the beaten eggs. Use a spatula to gently scramble the eggs, flipping them until they're soft and fully cooked.
- Build the breakfast tacos by adding the scrambled eggs onto a tortilla, crumbled bacon, diced avocado, and a dash of mozzarella cheese. Melt the mozzarella cheese using a torch, and sprinkle fresh coriander leaves.
