Cheesy Korean Fire Chicken

Ingredients
- 500 gm chicken breast
- 250 gm Happy Valley Mozzarella Cheese
- 4 garlic cloves, minced
- 4 tbs hot pepper flakes (gochugaru)
- 3-4 tsp hot pepper paste (gochujang)
- 2 tsp soy sauce
- 2 tbs canola oil
- ½ teaspoon ground black pepper
- 2 tbs rice syrup
- 150 ml water
- Spring onion, chopped
Directions
- Cut chicken breast into small cubes.
- Cut mozzarella cheese into small pieces.
- In a bowl add hot pepper flakes, hot pepper paste, soy sauce, canola oil, black pepper, rice syrup, and minced garlic, and mix it evenly into a spicy paste.
- Put the chicken into the bowl, mix evenly with the paste. Marinate for about 15 minutes and start to preheat the oven to 200°C.
- Place the chicken in a cast iron pan on medium-high heat. Add 150 ml water into the bowl with the remaining paste, then pour it into the pan, cook for about 10 minutes.
- Cover the pan, turn to low heat, cook for another 5 minutes then open the lid. Cook until the liquid has evaporated, and the chicken is fully cooked.
- Turn off the heat, add mozzarella cheese over the top.
- Move it to oven for about 5 minutes, until all cheese is melted.
- Remove from the oven and sprinkle with chopped spring onion, serve hot.
