Ham and Cheese Pastry with Mushroom
This cheesy puff pastry parcel is perfect for enjoying at breakfast, lunch or dinner and it’s a great way to use leftovers. Add a simple salad on the side for a satisfying meal.

Ingredients
- 150 gm sliced mushrooms
- 1 red chilli or red capsicum (remove seeds, chopped)
- 2 spring onions, chopped
- 2 tbs salted butter
- 2 frozen puff pastry sheets, thawed
- 250 gm sliced deli ham
- 8 Happy Valley Burger Slices cheese
- 1 beaten egg
Directions
- Preheat oven to 200°C.
- In a large skillet, add butter and mushrooms, sauté until tender.
- Add chilli and spring onions, mix for 1 minute. Set aside.
- Layer the ham, 4 cheese slices and half of the mushroom mixture on each sheet of pastry.
- Fold pastry over filling, pinch at edges to seal. Brush the top with beaten egg.
- Transfer pastries to a baking tray lined with baking paper.
- Bake at 200°C for 15-20 minutes or until golden brown. Cut into 4 slices.
