Scotch Fillet Steak with Pommes Aligot

Ingredients
- For the Pommes Aligot:
- 1 medium potato
- 10g butter
- 50gm Happy Valley mozzarella cheese, shredded
- Salt to taste
- For the Red Wine Sauce:
- 1/2 red onion, finely chopped
- 5gm butter
- 60ml beef stock
- 60ml red wine
- 1 sprig thyme
- Salt & pepper to taste
- For the Scotch Fillet Steak:
- 1 Scotch Fillet steak (approx. 200g)
- Salt & freshly ground black pepper
- 1 tsp cooking oil
- 3 cloves garlic, crushed
- 1 sprig thyme
- 5gm butter
- For the Sautéed Broccolini:
- 4–5 broccolini stems, trimmed
- 1 tsp oil
- Salt to taste
Directions
- Make the Pommes Aligot:
• Peel and chop the potato. Boil for 15 minutes or until soft.
• Drain and mash until smooth.
• Add 10gm butter and 50gm shredded mozzarella. Mix until melted, stretchy, and creamy. Set aside and keep warm. - Prepare the Red Wine Sauce:
• In a small pan, melt 5gm of butter over medium heat
• Sauté the chopped red onion until soft.
• Add thyme, 60ml beef stock, and 60ml red wine.
• Simmer until the sauce reduces and thickens slightly. Season to taste. - Cook the Scotch Fillet:
• Heat 1 tsp of oil in a pan over medium high heat.
• Season steak with salt and pepper
• Sear for about 3 minutes per side
• Add butter, garlic, and thyme to the pan. Baste the steak for extra flavour.
• Remove from heat and let rest for a few minutes. - Sauté the Broccolini:
• In the same pan, add a little more oil if needed.
• Add broccolini and cook for about 3 minutes. Season with salt. - Plate the Dish:
• Spoon Pommes Aligot onto the plate.
• Slice the steak and arrange beside the potatoes.
• Drizzle with red wine sauce
• Add sautéed broccolini and finish with a crack of black pepper.
