Scotch Fillet Steak with Pommes Aligot

  1. Make the Pommes Aligot:
    Peel and chop the potato. Boil for 15 minutes or until soft.
    Drain and mash until smooth.
    Add 10gm butter and 50gm shredded mozzarella. Mix until melted, stretchy, and creamy. Set aside and keep warm.
  2. Prepare the Red Wine Sauce:
    In a small pan, melt 5gm of butter over medium heat
    • Sauté the chopped red onion until soft.
    • Add thyme, 60ml beef stock, and 60ml red wine.
    • Simmer until the sauce reduces and thickens slightly. Season to taste.
  3. Cook the Scotch Fillet:
    Heat 1 tsp of oil in a pan over medium high heat.
    Season steak with salt and pepper
    Sear for about 3 minutes per side
    Add butter, garlic, and thyme to the pan. Baste the steak for extra flavour.
    Remove from heat and let rest for a few minutes.
  4. Sauté the Broccolini:
    In the same pan, add a little more oil if needed.
    Add broccolini and cook for about 3 minutes. Season with salt.
  5. Plate the Dish:
    • Spoon Pommes Aligot onto the plate.
    Slice the steak and arrange beside the potatoes.
    Drizzle with red wine sauce
    Add sautéed broccolini and finish with a crack of black pepper.
