- 2 Happy Valley Cheese Slices
- 2 Slices Wholemeal bread
- Salad leaf
- Sliced tomato
- Sliced red onion
- Sliced cucumber
- Carrot (julienne)
- 5 tbs Mayonnaise
- 3 tsp Dried parsley
- Squeeze of 1 lemon juice
- Salt and pepper
- Combine all herb mayo ingredients in a bowl.
- Spread the mayo onto each slice of bread, top with all vegetable ingredients and cheese.
- Slice and serve.
