Ingredients
- 2 slices of your preferred bread (sourdough works great)
- 1 ripe avocado
- 8 medley tomatoes (halved)
- 50 gm smoked salmon
- 2 tbsp feta cheese (crumbled)
- 1 tbsp fresh basil leaves (torn)
- 2 tsp lemon juice
- Salt and pepper (to taste)
Directions
- Toast the bread slices until golden and crispy.
- In a small bowl, mash the avocado with a fork. Add the lemon juice, salt, and pepper, and mix until well combined.
- Spread the smashed avocado evenly over the toasted bread slices. Arrange the halved medley tomatoes and fresh basil leaves on top. Sprinkle the crumbled feta cheese over the toast, add the smoked salmon slices.
- Serve immediately and enjoy your vibrant and flavorful toast!
