Spinach and Cheese Omelette

Ingredients
- 250 gm Fresh spinach
- 3 Eggs
- 1/2 Onion, diced
- 2 Garlic cloves, minced
- 2 Slices of Happy Valley Burger Slices
- 30 gm Happy Valley Grated Parmesan Cheese
- Olive oil
- Salt and pepper
- 1 Tomato, diced
Directions
- Crack 3 eggs into a bowl, season with salt and pepper, whisk together until well combined.
- Heat a nonstick pan with a medium heat and add in 2 tablespoons of olive oil, add in the diced onions and minced garlics, after 2 minutes add in the fresh spinach, continue to mix.
- Once the spinach has welted, turn to low heat, pour in the egg mixture, after 1 minute, add some grated parmesan cheese and 2 slices of cheese, cook for another 2-3 minutes. Make sure the omelette doesn't stick, then fold the omelette together.
- Transfer to a serving dish with some sliced tomatoes.
